Do you love broccoli? I am a huge fan of broccoli and it’s one of my go-to veggies. This recipe is for you if you are a broccoli fan like me. I eat this raw but you could probably cook them if you are not able to do raw veggies yet. I know everyone is in a different place when it comes to diet plans.
This is a salad I made pre-surgery to help me lose my weight to make it to surgery. I’m still on soft foods right now but plan to have this again when I can!!
This salad is super simple and easy to make. It’s a great salad to make ahead of time and have on hand for a quick meal to grab. It will also last you several meals. You could also add a protein easily to make a fuller mealer.
Broccoli is a great additive to any salad for keto, low-carb, or bariatric dieters. Broccoli only has 2 grams of carbs per half-cup. So it’s considered a superfood among the low-carbers. Full of great vitamins like vitamins A, B, & C, high amounts of magnesium, and potassium it’s a great healthy choice. It even has antioxidants like lutein and zeaxanthin that can help with your eyes.
Some of you may argue that raisins are not keto. I would agree to some extent but their health benefits make it a great item to add to a salad in moderation. They are full of fiber, vitamins, and minerals that carry high health benefits. If you are really worried about the sugar count though then just omit them, it’s still a great salad without them.
Sunflower seeds are a great choice for low-carb diets. They have some great health-fats that make them perfect your health needs. Low in carbs as well. I love the crunch they add to this salad. It’s like have some croutons but much healthier.
So let’s get to the recipe!
2 Broccoli Heads
⅓ cup of Chopped Red Onion
¼ cup of UNSALTED Sunflower Seeds
⅓ cup Sultana Raisins
1 cup of Mayonnaise
¼ cup of Heavy Cream
1 tsp of Splenda
Juice of ½ a lemon
Pinch of salt & pepper
Slice off all the broccoli florets and make sure they’re in bite-sized pieces. Add them to a large mixing bowl along with the chopped red onion, raisins & sunflower seeds.
To make the dressing, combine mayonnaise, heavy cream, Splenda, lemon juice, and salt & pepper in a small bowl and whisk together until smooth.
Add the dressing to the mixing bowl and stir until everything is well combined.
Refrigerate overnight and enjoy it!
